We'll be learning how to mix, knead, laminate and bake delicious croissants and other breakfast pastries. We will use fresh ingredients, starting from scratches, discovering how gluten works, how to insert the butter and how to give the "folds" to a real croissant dough. A selection in shapes and flavors will be baked and offered. You'll be able to take your production home for your next fancy breakfast. Some nice wine to kill the waiting won't certainly miss ;)
I am Executive Pastry Chef on board Viking Cruise ships, where I supervise my pastry and bakery teams in the production of the daily baked high end selection. Prior to this I've worked as Executive Pastry Chef for two other cruise company and I've been owner of my own Pastry and ice cream shops in Italy. I teach pastry and bakery techniques from several years in either professional and hobbyist environment. I love baking as well as teaching, and I', keen to share some tricks with you.
All ingredients will be given, and well' be eating our freshly baked pastries.
Drinks will be available throughout the class, and wine can't miss.
