This online class brings you into my kitchen, where I'll lead you through the steps of making pizza dough from simple household ingredients. What begins as tap water, salt, yeast, oil, and flour (we'll work with whatever kind you have) soon becomes tender dough -- all you need is the right technique.

You don't need any fancy equipment to use this method. We'll mix our dough by hand so all you'll need is a large bowl and clean hands. I've provided a dough recipe so please come to class with each item measured and ready. Measuring by weight is most accurate but if you don't have a scale you can use cups and spoons.

During the class, I'll explain some big picture concepts including the differences between various flour and yeast products. We'll get into fermentation science so you'll understand why good dough takes time.

This dough is designed for use within 1-4 days but I don't recommend using it immediately after the class made. I'll give you links to videos to help you stretch, top, and bake or you can sign up for another experience with me to handle that part of the process.

  • 5 cups or 700g of Flour (All Purpose is fine but Bread Flour is even better)
  • 2 cups or 460g Water (chill it in the fridge for a couple hours)
  • 0.5 tsp or 2g Instant Yeast (slightly less if you're using Active Yeast)
  • 3 tsp or 17g Salt (fine sea salt or kosher salt is best but we'll use whatever you have)
  • 2 tsp or 10g Olive Oil (nothing fancy)

    Scott was concise and efficient. He taught and explained well, and was very knowledgeable when presented with questions. It was super fun to make the pizza dough with him and discuss methods of making dough. He was very friendly which made the whole experience just that much better. I would definitely recommend taking this course if you’re interested in getting into pizza making but are unsure of where to start.
