As a child, back in France, my grand-father used to feed me goat’s cheese that he was maturing himself in his cellar. During the summer holidays before going fishing he would break a piece of old cheese and put it in my mouth, the thing was so hard i could not chew it but only suck it, wondering why i could not have sweeties like all the normal kids. This is how he planted in me the seed for good cheese. When I got to South Africa there was no cheese, and after many years of diet I eventually decided to make some myself, following my grand father principles of care and dedication, and my mission became to educate others on how to select and appreciate good cheeses
