You will see the herd of sheep in their barn (or in the fields, if it's summer season), and learn about their dairy routine (diet, veterinary examinations...), essential to guarantee a First Class Idiazabal Cheese. You will also visit the installations where the milk is processed, and of course..: TASTE THE DIFFERENT TYPES OF CHEESE and pair them with Basque Cider or Txakoli. Born and raised in San Sebastian, I know the Basque Idiazabal Cheese and the Flysch Routes like the back of my hand. Every Sunday since I was a kid, my father and I would pick a different walking route and discover new, beautiful spots. Among all, the Flysch Route is my favourite: located in the Basque Coast, the cliffs are a natural piece of art of infinite geological and esthetic value that show us the history of the Earth's evolution... during the last 60 million years! Regarding cheese, it was at the age of 10 when I became passionate about the whole cheese making process, after visiting a close friend's farm. Since then, I have not stopped visiting cheese farms and looking for new flavors and textures to try.
