Dashi is the fundamental soup stock of Japanese cuisine (washoku), and once one can make genuine homemade dashi, one can enjoy real Japanese dishes anywhere, anytime, even when far away from Japan. Our class focuses on the essential techniques for the preparation of dashi for the best flavor. First guests participate in a dashi-tasting to familiarize themselves with the variety of tastes. Then we roll up our sleeves and learn how to prepare dashi ourselves hands on.

Using the prepared dashi, we make miso soup and dashimaki (Japanese-style omelette), and round out the meal by making fresh home-made tofu, yakizakana (grilled-fish), rice, and refreshments including matcha tea.

Each class lasts approximately 3 hours from initial preparation to final meal.

Hi, I am Erina, host and founder of Dashi Cooking Class. My grandmother originally introduced me to Kyoto style cooking, as had been passed down in our family for many generations. Seven years of living and studying in the U.S. made clear to me that many people do not have access to real Japanese cuisine, especially Kyoto washoku. This inspired me to offer this new experience for travelers to Kyoto.

Realizing that Dashi and Umami are central to Japanese cooking, I got my Dashi Sommelier degree when returning to Kyoto. This class offers both a scientific view of the best ingredients and techniques and an appreciation of cultural aspects such as history and tradition.

I am excited to begin sharing this unique and beneficial cultural heritage with other people who share my interest in wholesome, healthy, and delicious food.

We have a dedicated kitchen and dining area for our Dash Cooking Classes a short walk from Daitokuji Temple.
