We will meet at Fine Mess Smokehouse, and we will start off by ordering aperitivos and some bar food to break the ice and make introductions. After we get to know each other a little, we will spend some time (about half an hour) getting to know barbecue and smoking: we will discuss its origins and history, national and regional cultural variations, local styles. Following that, we will grab our drinks and make our way downstairs to the Fine Mess' kitchen, in a specially designed lounge area. We will get acquainted with the offset barbecue smokers. Then, we will light our fire, prepare the food that we will be smoking and.. proceed to actually smoking it! You will have hands-on expeirience operating the barbecue and smoking specific foods that we will have agreed upon beforehand. During the smoking process, we will continue our discussion on smoking techniques (up to 45 minutes). Lastly, we will move back up to the seating area, where you will be able to enjoy your perfect dinner, with the food you have just smoked yourselves, alongside any other dishes you wish to order from the Fine Mess menu.
I'm co-founder and pitmaster of Fine Mess Smokehouse, Athens' authentic low and slow barbecue restaurant - and an avid traveller! I have lived abroad and travelled in Europe, Asia and the Americas. In 2015 I travelled across thirty-nine States in the USA, on a six-week, 21k kilometer long culinary road trip to discover and experience American culture & cuisine. During that time, I became fascinated with the art of barbecue and low & slow cooking with smoke. I built my own offset barbecue smokers, and spent the coming years experimenting and perfecting my craft. I started in the hospitality industry in 2011 when I founded Kokkini Svoura bistro & cocktail bar - nowadays, I spend my time in the kitchen at Fine Mess, smoking amazing meat, as well as fish, unusual cheeses and many other foods, and perfecting the art of barbecue & smoke!

The workshop will be held in Fine Mess Smokehouse, and specifically the Fine Mess kitchen, which features the only authentic offset barbecue smokers operating in Athens! Discussions will be held in the specialy designed lounge in the kitchen area, and dinner will be served in the restaurant's seating area.
