Traditional ecological knowledge (TEK) has been identified as a key resource for community resilience
in the face of environmental change by both promoting capacity for coping with change and supporting
community cohesion in the face of extremes. Pantescans have learned to live with such extremes, weather, no natural water supply, hurricane force winds, up to six months annual drought conditions. A community forming and using a cumulative body of knowledge, practices, and beliefs evolving by adaptive processes and handed down through generations by cultural transmission, about the relation of living beings (including humans) with one another and with their environment is why Pantelleria has thrived through the extremes the rest of the world maybe starting to face in the coming days and years. We will spend have of one of those days learning to T.E.K. the Pantescan way what you will learn can play a crucial adaptive role in your family and the community you call home.

I am a graduate of the Culinary Institute of America and have been working in and around food since I was four years old. Before moving to Pantelleria in 2011 I worked as a private chef for Manhattan's elite for over 20 years including Robert Wood Johnson IV, currently the US Ambassador to the United Kingdom, G. Chris Andersen, and Robert De Niro. Since moving to the island of Pantelleria. One of my core beliefs is what we know is how we live in harmony with our surroundings, who we are is passed down to us by our families traditional ecological knowledge (T.E.K.) we are what we eat or what we eat eats. I have immersed myself in farming and wild foraging my whole life and Pantelleria is the best source of everything you need. All you need to know is what is around you and what you can do for it and it will do for you in return.

Our experience with Peter was beyond what we expected! We started our day with an early coffee, before we reached the mountain's top of Pantelleria. After a short walk, we had a chance to have one of the most special moments of our trip - we saw a sunrise! From there it got only better; Peter is very knowledgable about the island and its secrets so having a walk with him felt truly special. Once he discovered that we were interested in wine (i'm studying to become sommelier), he did his best to show me wine culture of the island. We ended up our day with a delicious lunch at Peter's place, joined by the family. Wonderful day, a moment to remember!

This was my first Airbnb experience and I can definitely say it was great! Peter is a nice, talented and experienced American chef who moved to Pantelleria a few years ago with his family. The experience started early in the morning when Peter brought us in a special place to see the sunrise. Then we explored a few spots in the island and foraged for some ingredients in each of these spots. He taught us many things and told us a lot of interesting stories. Then we helped him with the ingredients and he prepared us an amazing lunch. I highly suggest doing this experience with Peter when in Pantelleria to spend an unusual day, learn many things, even reflect on life in general and appreciate and love the island even more thanks to Peter's passion and experience.
