Learn about fermentation and sustainable agriculture at Fattoria Bucolica, an urban farm where my family produces olive oil, wheat, eggs, aromatic herbs, jams, pickled vegetables, and creative drinks. During this hands-on workshop, I’ll show you how to make some of our seasonal ferments—and we’ll taste our creations, of course.
• We’ll start with a farm tour, where I’ll show you how my brother and I approach regenerative and organic agriculture.
• Next, we’ll gather in the farmhouse for a demonstration of seasonal ferments featuring Tuscan flavours.
• We’ll taste three traditional appetizers, reinvented through fermentation, alongside three fermented drinks such as wine and kombucha.
