Shaped like miniature pillows (hence the name), banh goi contains finely-chopped glass noodles, wood ear mushrooms, minced pork, steamed quail eggs, and seasoning within a rice-flour pastry. It is then deep-fried for a crispy texture and served with a sweet-sour dipping sauce made with garlic, chilli, sugar, lime juice, and fish sauce. Quán Gốc Đa is known for many varieties of deep-fried street food like nem cua be, bánh gối, and bánh tôm. Bánh gối is like a Vietnamese empanada filled with minced pork, mushrooms, glass noodles, and a quail egg. The filling is placed in the center of the pastry skin which is then folded and pinched closed in a half circle before being deep fried to a golden crisp. Bánh gối means “pillow cake” and it gets its name from its shape, which is said to resemble a pillow. Next to the bánh gối is another Hanoi specialty called bánh tôm, which is a sweet potato shrimp fritter.
